Princess birthday

By the title of this post one might conclude that I am celebrating a fifth birthday. Nope, May 6th marks the birthday of my now twenty-five year old roommate, Amanda. The theme was princess. Every girl deserves to feel like a princess on occasion but always on her birthday.

Amanda gracefully promenaded around the kitchen with her wand and tiara as any birthday princess would. Did you know that Lady Gaga, Nick Jonas and B.O.B. make for electrifying and expressive princess dances?

We sipped, we savored, we dined, we danced, and we celebrated.

Dinner

::Teriyaki chicken topped with an avocado mango salsa and Giada's couscous cakes::

For the topping:

1 avocado

1mango

1/4 cup chopped red onions

1/2 cup corn (frozen)

1/2 cup cherry tomatoes (halved)

1/4 cup or so cilantro

dash of salt

added lime juice to taste

Dessert

This would be a cake from BJ’s. Our friend Lauren is a member of BJ's wholesale club for the frosting cakes alone. I do not blame her. The whipped frosting surrounding the edges was scooped up by our fingers before the first piece was even laid to rest. The marble inside could have only been created by a Cake Boss prodigy. The chocolate mousse was just divine. All together this cake was fit for a king. Better yet, a princess.

Parting words for all princesses: never let anyone take away your voice; it is yours and you deserve to be heard. Don’t let anyone destroy your sleep; with a pea or with a poisoned apple and do not allow your fairy tale to end at midnight.
